The locations show where personal data is processed on behalf of LAMP Stack PHP5.6.
Why and how should I assess this?

If data is processed outside of Europe, there must be a basis for the transfer. Check to ensure that LAMP Stack PHP5.6 has stated a legal basis for data transfers.
